the Polish-born Andrzej Kaczmarski opened his first bar in St Kilda. Determined to bring something different to Melbourne's already established nightlife scene, he named it Borsch as a nod to his homeland. A year later he expanded into the next door space and opened Vodka Temple in honour of Poland's favourite tipple.

In , he moved back to Europe where he ran bars in Dortmund before returning once again to Australia in .

Andrzej was born in Warsaw in . He emigrated from Poland to St Kilda via Dortmund in the early 80s with his wife, who was pregnant with their son at the time. They both worked full-time to make ends meet while raising a family. And while they were working long hours they noticed there was no Polish or Eastern European food available anywhere in the area. So they opened their own restaurant, Borsch Vodka & Tears on Chapel Street.

Andrzej's work ethic led him to open three more restaurants on Chapel Street which all eventually closed because he was always working so hard that he couldn't devote any time to them.

Andrzej Kaczmarski emigrated from Warsaw to St.Kilda via Dortmund in the early 80s and soon found himself working at a Polish restaurant on Chapel Street. He quickly discovered that many Polish customers would ask for vodka but be unable to pronounce it correctly so he started saying Wot you want? which was his way of saying What do you want? in Polish. The phrase caught on with other customers who also couldn't pronounce vodka properly and so the phrase became a brand name for all of his take-away cocktails.

In after selling the retail side of his business to focus on wholesale distribution, he opened the first Borsch Vodka and Tears store in St Kilda.
